About Us

Our Story

Pioneer Valley Charcuterie Team is JD and Meghan Fairman, along with our two daughters, Shea and Bryson.  After years of traveling, and working in kitchens throughout the east coast, we have chosen the Pioneer Valley to call home and build our new business.  We have  decided to hang up our chef coats, temporarily, and delve into the food producer's world!

Our Bacon, Our Flagship

What started as a way to honor whole animal butchery, our Maple Pepper Jowl Bacon has really taken on a life of it's own! Our brine is a little different, our cut is a little different, our bacon is a little different.  Those little differences add up to make a product that is unlike anything else!

Our Mission

It is our goal to provide a quality product to our customers, skillfully crafted with minimal ingredients and old world techniques. Customer satisfaction is our top priority, and if you are unhappy with our bacon in anyway, please let us know so we can make it right!
